Chicken Taco Soup
ingredients:
- 2 leftover Roasted Chickens and Broth
- 1 Medium Onion diced
- 2 Cans Black Beans (one can be a tri bean blend)
- 1 bag frozen Corn
- 1 Can Green Beans
- 1 can Rotel’
- 1 package Ranch Dressing
- 1 package Taco Seasoning
I roast my chickens with Parsley,
Garlic Powder, Sage, Marjoram, Thyme, and onion flakes. I put a Chicken
Bouillon Cube in the water with the chicken. I mention this because these herbs
will be in the soup through the broth. I
save the broth and leftover chicken and freeze it for later to make soup. I also look in my refrigerator and find
leftover vegetables and add them to the soup too. I take the broth from the 2
chickens and I boil it down some to make the flavors stronger. Then I put all
the ingredients in the crock pot and put it on high or medium (4-5 hours).
