I have been making some Afghans for Christmas Presents!!




I also made a shawl for my secret pal!!


I think she really liked it!! It was so fun giving it to her!! Of course she knows who I am and it is no longer a secret. Since I am the only one that makes and gives homemade gifts!!

New Recipe!! these are really good!! 


Roasted Winter Vegetables
Sweet Potatoes, Carrots or Butternut Squash chunked
1 teaspoon Old Bay Seasoning
½ teaspoon Garlic Powder
¼ teaspoon Oregano
½ teaspoon salt
½ teaspoon pepper
2 Tablespoons Olive oil

Directions:
Preheat oven to 400° use some olive oil to oil cookie sheet.

Mix together the vegetables and the spices in a Ziploc bag. Add Olive oil, seal the bag and mix it around with your fingers till they are well coated.

Bake for 45 minutes stirring occasionally till they are cooked through and golden brown.

I had Low Carb Oat Bran Blueberry Muffins and a Banana Berry Smoothie for Breakfast today!!
My Smoothie had a Banana and some mixed frozen berries some cranberry juice and vanilla yogurt, And some fresh Spinach leaves!! Blended in my little blender. Recipe for muffins below!!

Oat Bran Muffins



2 ¼ C Oat Bran
½ C Blueberries
2 t Baking Powder
½ t Salt
¾ C Milk
2 Eggs
¼ C Stevia
2 T Oil

Directions:
Mix all ingredients together. Put into muffin cups and bake at 350° for 20 minutes, or till done.

Ok!! I toasted them!! They did well in the toaster. They mostly toasted on the edges.


I added some butter on top of them and they tasted real good!! They tasted like crunchy Cinnamon Rolls!! I also had a little Ham and Swiss eggs for Breakfast too!! 

Today I plan on making an Instant Pot Pumpkin Cheesecake!!

I made some Low Carb Flax Seed Buns today.

I have a baking pan that you can make Hamburger Buns in. So I found a recipe for Flax Seed Muffins and tweaked it a little. I plan on using them for toast in the mornings for Breakfast. So tomorrow I will see how they do in a toaster!!



Flax Seed Buns (LOW CARB)

3 lg eggs
1 1/2 sticks of butter, melted
2 tsp. vanilla
3/4 cup Vital Wheat Gluten Flour (Bob's Red Mill)
1/2 cup Splenda
1 1/2 tsp. baking powder
dash of salt
ground cinnamon, 3 big dashes
1/2 cup water
1 cup Flax seed meal(Bob's Red Mill)


Preheat Oven to 350°F.

Beat eggs, add melted butter and vanilla and continue to beat well. With an electric mixer or whisk, add ONE BY ONE: Vital Wheat Gluten Flour, Splenda, baking powder, salt and ground cinnamon. Beat well. Stir in water and flax seed meal.

Spray bun pan with oil, Makes 6 Buns. Bake for 35 minutes.

They can be individually wrapped and stored in the fridge.

oui Yogurt Jars!! I made these nice little candles!!

I used Modge Podge and some food coloring and I painted them.  Then I put some lace ribbon around them and put little battery operated Votive candles in them.

I have another idea for Christmas ornaments to make with them. I think I will color them red and put the little candle in them and crochet a sling for them to hang on a tree!! I just have to figure out my crochet part!!

I made some Oat Bran muffins with Blueberries this morning. they are also Low Carb!!



Oat Bran Blueberry Muffins Low Carb

2 ¼ C Oat Bran
½ C Blueberries
2 t Baking Powder
½ t Salt
¾ C Milk
2 Eggs
¼ C Stevia
2 T Oil
Directions:
Mix all ingredients together. Put into muffin cups and bake at 350° for 20 minutes, or till done.


I am trying some recipes that are Low Carb or Keto but they are like bread. I guess I just like bread too much!! Especially for breakfast. These muffins were real good this morning!!

Ok!!! So I seem to be getting a collection of oui Yogurt jars. And I want to find some kind of craft to do with them!!

I found a few on Pinterest. It seems like the most ideas are votive candles. I want to make crafts that I can give away as gifts.

I think I really like this idea the best. Putting a cutout on the jar them painting it!! I may try this one out!!

I decided to experiment and see if I could make some KETO Pudding Pops. So here is my recipe!!


Keto Chocolate Pudding Popsicle
3 Eggs
¾ Cup granulated sweetener
2 Cups Heavy cream
¼ cup water
1Tablespoon Vanilla
½ teaspoon Salt
½ Cup Cocoa Powder


Put all ingredients into a sauce pan and Whisk while heating up on the stove. Keep whisking till it comes to a boil. Remove from heat and prepare Popsicle mold pour into molds and add Popsicle sticks. Place in freezer till solid.  I used the leftover as pudding and it is good too!!
